Chocolates
From luscious, enrobed, hand-decorated ganache truffles and candied fruit to exquisitely detailed molded, filled chocolates, our goal is to provide our customers with a delightful, sensual, chocolate escape. In our shop in Boulder, Colorado, we combine the quality of old-world, artisanal techniques with the flexibility of modern, customized, small-scale chocolate manufacturing. Our customers count on us for the best in chocolates, and for custom chocolate recipe development, manufacturing and packaging to the highest standards. We use only the highest quality natural and organic ingredients, no artificial colors or flavorings, and our facilities are completely nut-free.
Primarily, we use organic Ecuadoran chocolate, processed from cacao beans by Schokinag Chocolate Belgium S.A., of Manage, Belgium.
Nutmeg Caramel Snobinette
We combine a soft caramel made from pure organic cane sugar with organic cream gently infused with freshly ground organic nutmeg. White chocolate and dark chocolate add body to the caramel and it’s finished with a dash of organic creamery butter. Our snobinette shells are hand-dipped from 66% dark chocolate, filled with the soft caramel, and capped with a thin layer of molten organic milk chocolate.
Mint Truffle
Our mint ganache starts with fresh organic cream infused with a delicate blend of peppermint and spearmint. We add organic butter and organic dark chocolate, slice the ganache into perfect squares and enrobe it in more dark chocolate. One enthusiastic customer exclaimed our truffles were the best mint candies she had ever tasted, reminiscent of the mint chocolates she had as a child in Europe.
Raspberry Truffle
Our raspberry truffle starts with a delicate raspberry ganache, crafted from fresh organic cream and butter, organic raspberries and velvety dark chocolate. To sharpen the taste, we add a splash of raspberry Eau de Vie, and coat the delectable package in dark chocolate. To make the taste experience unmistakably raspberry, we make sure there are a few raspberry seeds in every bite, and add some freeze-dried organic raspberries for extra fruitiness. (The red coloring in the truffle decoration comes from finely ground freeze-dried organic raspberries. We use no artificial colors or flavorings.)
Enrobed Candied Lemon
We candy the freshest organic lemon slices slowly, over twenty-five days, using a traditional European method to preserve the intense lemon flavors. We then quarter each lemon slice and enrobe each piece in rich, all-natural dark chocolate. For a finishing touch, each chocolate is hand-decorated with a delicate tracery of organic milk chocolate.
Coffee Truffle
For great coffee truffles, we start with a custom blend of organic Guatemalan and Ethiopian coffees from Allegro Coffee. 66% and 78% dark organic chocolate, organic butter and fresh organic cream are added, giving a perfectly balanced taste highlighting hints of blueberry and orange peel in the coffee blend. For fun, we top each truffle with one perfect coffee bean.
Ginger Truffle
Our glossy ginger truffles are made from molded 66% dark chocolate, splattered with several shades of cocoa butter colored with bright, natural colors, and filled with a ganache made from organic cream infused with fresh organic yellow ginger from Puna, Hawaii. We finish the ganache by mixing in spicy pieces of candied Australian ginger for an unforgettable ginger-lover’s treat.
